I was very fortunate to have tons of scholarships and financial aid my freshmen year of college that I was able to the have the largest meal plan possible at Texas A&M, ya know, back in the good old days when Sbisa cookies were "oh so delicious" and before dining was outsourced. Back when I could walk anywhere on campus and get food without worrying about cost... yeah cost.
Typically after your freshmen year you don't get as much aid that was my case but I was very fortunate to land a Resident Advisor (RA) position with the Department of Residence Life here at Texas A&M so I would be living on campus for my sophomore year of college. Yeah... crap... I would still be living on campus! How am I supposed to eat without a kitchen, without an expensive meal plan, I literally thought I would go bankrupt eating out all the time. Needless to say I was really worried about the year to come.
I am currently a super senior at Texas A&M and I am retelling my story from way back when on what my outcome was with still living on campus and with no dining meal plan. I've currently been an RA for the past 4 years and I am not bankrupt, so YES IT IS POSSIBLE! And I hope to share with ya'll a couple of recipes I have come across or created during my couple of years of living on campus with no meal plan!
SO...
residents can have the following in their dorm:
700 watt microwave
3ft x something fridge
crock-pot (my savior)
small blenders
coffee pot (the real MVP)
and an assortment of other things I may bring up from time to time.
Today I will be sharing a recipe that involves a handful of produce you can buy from the Howdy! Farm
------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------
Andrea's famous crock-pot frijoles:
(and no they are not really famous)
1 lb pinto beans
4 garlic gloves (or I just used a few dashes of garlic powder and it turned out great!)
1 tomato (from the Howdy! Farm)
handful of jalapenos or so (depending on your taste, and also you can buy from the Howdy! Farm)
1/2 a brick of bacon (or square, whatever floats your boat)
1) Place your Reynolds(R) Slow Cooker Liner on your crock-pot pan
2) Place 1/2 of the brick of bacon on the bottom of your crock-pot pan
3) Dump the 1 lb of pinto beans on top of the bacon
4) Dump cloves or dashes of garlic power, sliced tomato and sliced jalapenos on top of the beans
5) Add enough water to cover the beans/produce and then add about another inch of water
6) Turn on high for about 3 1/2 hours
7) Enjoy!
------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------
I want to thank my mom for teaching me this recipe, the tomatoes and jalapenos were my touch in this recipe because I love vegetables and hot stuff and I love thinking of new ways to feed myself frugally!
